What's for Dinner - the Rainbow Goldfish Edition

My kids love the colorful Goldfish crackers. I was excited when I found this recipe that used them:


You Need:
2 cups colored Gold Fish crackers, crushed
2/3 cup bottled ranch salad dressing
1 lb chicken breast tenderloins


Directions:
Preheat oven to 425 degrees F. Line a 9x13-inch pan with foil; lightly coat with cooking spray. Set aside. Place the crushed crackers in a plate. Pour the ranch dressing in another plate. Dip chicken into dressing and then into cracker crumbs, coating both sides. Arrange chicken in prepared pan. Bake for 20 minutes or until chicken is no longer pink. Serve with additional ranch dressing.

I am going to serve with some veggie and mac & cheese. Sounds easy and yummy!
