Tempt My Tummy Tuesday - Cheesy Chicken & Broccoli Bake



Another broccoli dish...Hmmmm...I am sensing a theme here....

What you need:

1pkg (6oz) stuffing mix for chicken
1-1/2 lbs boneless skinless chicken breasts, cut into bite-size pieces
1pkg (16oz) frozen broccoli florets, thawed, drained
1 can (10-3/4 oz) reduced-sodium condensed cream of chicken soup
1/2 lb (8 oz) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2" cubes


Directions
Heat oven to 400 degrees. Prepare stuffing mix as directed on package and set aside. Combine the remaining ingredients; spoon into a 13 X 9" baking dish. Top with the stuffing. Bake for 40 minutes or until the chicken is done.


This was very yummy and easy. My whole family gobbled it up and we have enough that it will feed us again this week.

Tempt My Tummy Tuesday - Million $ Spaghetti Casserole

While I would love to take credit for this recipe, I cannot. I found it over here at Problem Solvin' Mom.

First you need:

1 lb ground hamburger (or turkey)
1 box of spaghetti
1 jar of spaghetti sauce
8 oz of cream cheese
4 oz of sour cream
8 oz of cottage cheese


Brown the hamburger and cook the spaghetti and set aside. Then mix the sour cream and cheeses together and set aside. In a 9x13 baking dish, put half of the cooked noodles in the bottom. Then add the cheese/sour cream mixture. Add the rest of the noodles, then the hamburger, and then the spaghetti sauce. Bake for 30 minutes at 350 degrees.


I made this up the night before. While making Tuesday night's dinner, I browned the hamburger and cooked the noodles. Later I mixed it all together. I let it sit overnight and cooked it for dinner Wednesday night. I totally recommend doing that.


My family loved this meal!! My girls asked for seconds and my husband that doesn't really enjoy pasta liked it too. I served cheesy garlic bread with it.

Tempt My Tummy Tuesday - Spinach Lasagna


I am going to share my favorite spinach lasagna recipe. It's a huge hit in our house.

You need:
9 lasagna noodles (I usually use the no-boil ones)
10 oz frozen spinach thawed out, rinsed, and drained
2 eggs
16 ounce cottage or ricotta cheese
3 cups mozzarella cheese (divided)
26 ounces of spaghetti sauce
Parmesan cheese


Directions:
1. Preheat oven to 350. Place 2 eggs in the bowl and beat smooth. Add the spinach, cottage or ricotta cheese, 2 cups of mozzarella cheese, and sprinkle in some parmesan cheese. Stir together.

2. Now, put your lasagna together. put down about a cup of sauce, then 3 noodles. Add half the cheese/spinach mixture. Repeat. Top with the remaining noodles, sauce, and mozzarella cheese. You can also add some parmesan cheese to the top.

3. Bake for 45. Let stand for 10.
