Tonight is one of my favorite, easy recipes. A few weeks ago, I had cooked some chicken breasts in the crock pot all day with some salsa. I then shredded the chicken. That night we had chicken tacos, but there was plenty of chicken left, so I froze it. We are going to use that up tonight.
It's really easy. I take that shredded chicken and put it in some tortillas with some cheese. I roll them up, add some more cheese and salsa to the top, and back for about 20-25 minutes. I serve it with some Spanish rice and corn usually.
Super easy and yummy too!
